Busiata is a typical pasta shape from Trapani, in West Sicily. Busiata is from Busa, the grass that was used by our Sicilian gran mothers to make this special pasta.
We farm our selected type of wheat in our family land and with the semola we mix and extrude the pasta using bronze dies and we slowly dry it for over 24 hours.
The result is a more porous and artisan feel pasta that strongly binds to all sauces from meat to fish. This pasta is made with Saragolla wheat. It is great source of fibre, selenium, manganese, magnesium and protein.
